"Anything is possible underground," says David Provost, owner of Bacchus Caves, a Napa and Malibu-based company excavating creative spaces since 1997.   Provost has turned his commercial tunneling expertise into a wine-focused business for clients in CA wine country and across the United States. Whether for Cliff Lede Vineyards or the Meritage Resort's new 19,000-square-foot Spa Terra and wine bar/entertaining space opening later this summer in Napa. Provost relishes the one-on-one creative process.   And it doesn't matter if the client is as high-profile as Dana Winery or a discreet as a zillionaire wine snob.  "If you can dream it, we can build it."
